Couscous with Grilled Veggies

For the veggies:
1 zucchini
1 carrot
rosemary
black pepper
salt
olive oil

Wash and cut up veggies season with spices and olive oil and bake for approximately 45minutes or until golden brown. I only had zucchini and carrots at the time of preparing this dish but you could use any vegetables at hand…aubergine, peppers, onion, the list goes on

For the couscous:
Prepare 1 cup couscous as per the manufacturers instructions, they usually advise boiling water but I prefer lukewarm water.  If you prefer to serve the couscous as a warm dish you could steam the couscous with 3 or 4 tablespoons of water before serving.
Combine the couscous and grilled veggies, season with a dash of olive oil, balsamic vinegar and a sliver of smoked salmon.
