Masala Chops

My aunt makes these tender masala chops when our family gets together.

For the marinade all you need is:
2 teaspoon Garlic and Ginger
¾ teaspoon Salt
½ bunch of fresh Coriander
½ teaspoon Chili powder
1 teaspoon Cumin powder
½ teaspoon Turmeric
½ teaspoon Coriander powder
½ teaspoon Fennel powder

This should be enough marinade for a dozen chops.

Liquidise all together with a little bit of water. You may need to pulse the mixture initially and keep pushing the coriander down near the blender between pulsing.

Marinate chops for about 30mins.

There are 2 ways of cooking this:

Place marinated chops in the dish so that they lie flat. If you like you can add potato wedges to the dish. Cover with foil and bake at 180C for 30mins. Remove the foil and continue to bake for another 30mins or until the sauce is drier and the chops start to brown. If you like your meat well done then you may want to turn the chops over in the final 15mins.

In the pot:
Place a small blob of butter and a dash of oil in a pot – not too much as chops normally have a good amount of their own fat. Place marinated meat inside and cook slowly. When almost done add potato wedges (optional). Cook until chops are tender and slightly browned.
