This is the dip you get at the Spice Market, with the pappad platter.
1 bunch of mint leaves (get the Lebanese mints as it has a richer flavour)
1 bunch of coriander leaves
2 green chillies
1/2 inch piece of ginger
Add 2 cloves of garlic if you like the garlicky taste.
Grind the above to a smooth paste, with some salt.
Before serving squeeze half a lemon into this. Voila!
