Pecan Nut Slice

Zeenat Adam shared this recipe with us:

I had picked some pecans from trees in the garden and didn’t have any new ideas on what to make with it. Inspired by Salma Mayet’s Coffee Pecan Brownies, I decided to try my own recipe:

Pecan Nut Slice

Base:
1/4 cup butter
1/2 cup granulated sugar
1/2 cup treacle sugar
1 large egg
1 tsp maple flavor or vanilla essence
1 1/2 cup flour
1 tsp baking powder
1/2 tsp Bicarbonate of soda
1/4 tsp salt
1/2 cup chopped pecans

Cream butter and sugar
Add in egg and beat well
Add essence
Add chopped pecans
Sift flour, baking powder, bicarbonate, salt and gradually add to form a dough
Press into a rectangular baking pan

Bake for 20 min  in preheated oven at 180 celsius

Fudge brownie

60 grams butter
1/4 cup sugar
1 tbsp golden syrup
1 egg
1/4 cup cocoa powder
1/4 tsp filter coffee
1/4 cup flour
1/4 cup finely chopped pecans

Melt butter, sugar and cocoa powder in a saucepan
Stir in golden syrup
And filter coffee
Cool slightly and beat in egg
Fold in flour and pecans

Smear over biscuit base and return to oven for additional 10 – 12 min

Topping ideas

Pour Melted chocolate over (I used mix of dairy milk and beacon nut)
Shavings of milky bar
decorative pecans

Serve hot – optional to serve with side of cream or ice cream
