Chicken and Methi Bhaji (Fenugreek) Lagan

 

1 chicken breast- cubed

Cook in ginger garlic, salt, little turmeric and ground green chillies. Don’t add water. Cooks in own water. Keep dry.

In bowl, add these ingredients:
1 medium onion, grated
1 bunch methi baaji (fresh fenugreek), chopped
1 cup gram (chickpea) flour
1/4 cup cake flour
1 cup warm milk
1 tsp crushed green chillies
1 tsp dhania jeero (dried coriander and cumin mix)
1 tin sweetcorn- NOT creamstyle
1 tsp salt
1/2 tsp turmeric
1 cup oil
3 tsp baking powder
3 eggs

Mix all together.
Note: The dry ingredients excluding the chicken sucks a lot of liquid, so feel free to add the full amount of liquid needed. The end result shouldn’t be dry. Add the cooked chicken. Pour into a Pyrex dish. Brush with egg. Add til (sesame seeds), etc. and bake till done.
